Whole Wheat Pancakes
- 3 eggs
- 1.5 cups milk
- 1/2 tsp. salt
- 1 Tbs. oil
- 1 cup wholewheat flour
- 1 Tbs soy flour (we don't always add this)
- 3 Tbs. honey
- 1-2 tsp. grated orange rind
- 1/4 tsp. cinnamon
- Blend eggs, milk, salt, honey, orange rind and cinnamon.
- Sift flours together into bowl.
- Pour liquid mixture over flour.
- Blend all until smooth. Batter should be thin.
- Pour into hot, lightly oiled pan and brown lightly on both sides.
- Serves 4-6.
