Whole Wheat Pancakes

• 3 eggs
• 1.5 cups milk
• 1/2 tsp. salt
• 1 Tbs. oil
• 1 cup wholewheat flour
• 1 Tbs soy flour (we don't always add this)
• 3 Tbs. honey
• 1-2 tsp. grated orange rind
• 1/4 tsp. cinnamon

• Blend eggs, milk, salt, honey, orange rind and cinnamon.
• Sift flours together into bowl.
• Pour liquid mixture over flour.
• Blend all until smooth. Batter should be thin.
• Pour into hot, lightly oiled pan and brown lightly on both sides.
• Serves 4-6.
