Fall Harvest Soup
- 1 package of Trader Joe's bean mix
- 1+ cup each carrots & onions
- 1/2 cup wheat berries
- 1 320z vegetable broth
- 1 14.5oz can fire roasted diced tomatoes
- 1 can fire roasted chilis
- 3 to 6 cloves garlic
- 1 small can of corn
- salt & pepper to taste
Put all ingredients in a pan and bring to a boil.
Reduce heat and simmer for one hour.
For 1/2 hour I removed the lid to reduce the liquid.
Trader Joe beans are 13oz of white kidney, cranberry, red kidney, black, white
navy & black-eyed beans
I forgot the rosemary & zest at the end.
